Pool Party Cupcakes

Got a pool party on your calendar? Then you need to make these! It's always fun to be the person who brings the 'cute Pinterest-y' dessert to a party. These Pool Party Cupcakes will delight the kids-- and maybe even impress some of the adults :)




I used a box chocolate cake mix for the cupcakes (and added an extra egg, plus a teaspoon of vanilla-- it makes the mix taste more 'homemade').  After letting them cool completely, I iced them with a can of cream cheese icing. A few drops of blue food coloring made this pretty turquoise color.



Next I dipped the tops of the cupcakes into blue sprinkles.



Then added a Teddy Graham bear into a LifeSavers Gummies . Pretty cute huh?


I couldn't find paper umbrellas at Target, so I made my own using cupcake wrappers and tooth picks. (But it's honestly easier to just buy them here-- Paper Drink Parasols) On some of the cupcakes, I added crumbled graham crackers to make a 'sandy beach'. Then I stuck in a Teddy Graham bear on the sand-- catching some rays :)


I also sat each cupcake in another cupcake wrapper. You know how when you bake them in wrapper, the wrapper gets a little messy. So placing them in a new, crisp wrapper makes them look more 'finished'. It's all in the details right?!


The cupcakes were a hit at the party. And my daughter and I had a lot of fun making them together. Which is really what it is all about.
