Pinterest Inspired Holiday Food
We hosted our "Christmas with Friends" party again this year. It's our second year and this one was just as fun as the last. We ate all the yummy things, drank the drinks, played LCR, and laughed a lot.

Snowing on the Sun & Whole Wheat Peanut Butter Cookies
Living in Texas is a lot like living on the Sun. The summers are scorching hot. And the other seasons... are pretty much non-existent. I am not complaining, I really do prefer to warm. I am not used to being cold and I don't own much cold weather gear. (Besides the random gloves I bought at the Dollar Spot at Target and my collection of cute plaid scarves that every girl seems to own.) So we were all surprised to get a dusting of snow on January 6th.

Santa Pancakes for Christmas Breakfast
Who wouldn't want to wake up to this cute Christmas breakfast?! Fluffy pancakes topped with fresh strawberries and whipped cream. I love to make special treats during Christmas break. Those two weeks when my girls are home from school are the best. Our mornings are slower, we listen to Christmas music and snuggle in jammies by the fire. The glow of our Christmas tree seems to warm the entire house. And making these Santa Pancakes is a treat- not only to eat... but to make!

Crawfish Dessert
It's Crawfish season again! And once again, I refuse to eat them. But that doesn't mean I don't like a good crawfish boil. Whenever we go to one, I like to make my 'famous crawfish cakes'. They are the perfect dessert for any festive crawfish boil.

Pumpkin Cheesecake Bars & More
Our friends hosted a Thanksgiving party on Saturday-- it was a Friendsgiving Party. A Friendsgiving is a fun way to celebrate being thankful, with your friends! The food at Friendsgiving Party is the same as a traditional Thanskgiving meal. But instead of one person being in charge of the entire meal, it is pot-luck style. I signed up to bring a dessert. After a quick Pinterest search, I settled on Pumpkin Cheesecake Bars. I liked that they were a traditional 'pumpkin' dessert- but with a twist!

DIY Rosette Cake (Posh Puppies in Paris theme)
My sweet Maisy Lou turned six last week. And this year, I felt like making the cake myself! So that's what I did :)
Maisy's birthday theme was "Posh Puppies in Paris"-- it went along with the Fashion Runway party package that we ordered at Sweet & Sassy. I knew I wanted her cake to be girly, pink, and a little 'over the top'.

DIY Crawfish Cakes
We lived in South Louisiana for a little over 4 years. And in all that time, I never developed a taste for crawfish or even seafood. Things that swim under the water just don't appeal to my tummy. My husband has tried everything to convince me otherwise. He has raved about the taste, the health benefits etc. But nothing will change my my mind about eating seafood.
Now that we live in Texas, my husband still manages to get his 'seafood fix'. My friend Kim hosts an a Crawfish Boil each spring. And I am happy to attend, knowing that there will be plenty of 'non-fishy' sides for me to enjoy. All the guests bring a dish to share and there is always a big spread of dips, appetizers, chips, and other munchies. So I decided to make a dessert. I have had this "Crawfish Cakes" photo made by Living Locurto pinned on my Pinterest board for over year. And this party was the perfect excuse to finally make them!!!
You can see a video tutorial of how Living Locurto makes her cakes using store-bought lady fingers. I searched for lady fingers and little pre-made cakes at Target, but couldn't find anything. So I had to modify her tutorial a bit. Below is how I made my own version of "Crawfish Cakes".
Crawfish Cakes
-Red Velvet Cake Mix (use 3 eggs so your cake will be dense and easy to cut.)
-Icing (I added red food coloring to my icing, or you can buy it already colored.)
-Twizzlers
-Wilton Candy Eyes
-Icing bag with tip
-Sprinkles or large granulated sugar
1. Using a box mix, I baked a big red velvet sheet cake. Then after letting it cool (it has to cool completely!) I flipped the cake onto a cutting board.
2. Using a serrated bread knife, I sliced the cake into small rectangles, approximately 2 inches wide and 3.5 inches long. Then I rounded the corners of each little rectangle.
3. With kitchen scissors, cut each twizzler in half and snip the ends to make a 'claw'.
4. Cut open each little cake like a sandwich. I piped icing on the inside of each cake, laid two twizzler claws on top of the icing, added more icing on top of the twizzlers and then closed the cake sandwich.
5. Finally I piped icing on the top, added large granulated sugar and two eyes.
I did have extra cake left, so I cut those into cubes and added a little icing and sugar. These made cute bite sized cakes.
The party was a blast and the Crawfish Cakes were a hit. I can say for sure these Crawfish Cakes are the ONLY kind of crawfish I will ever eat!

Homemade Noodles
It's Sunday and there are high hopes around here that school will be cancelled on Monday due to 'incelement weather'. In North Texas, we don't get much snow. But a good ice storm will shut the metroplex down. Which means today is the perfect day for comfort food.
I have shared this recipe before, but it is SO good it deserves to be shared again. It's my Grandmother's Homemade Chicken Noodle Soup. The thing that makes this recipe stand apart from all the other chicken noodle soups out there is that the noodles are homemade.
Have you ever had homemade noodles? They are a game changer.

Today, both my girls wanted to help, but the little one lost interest after about 15 minutes. Homemade noodles aren't hard, but they take some effort (and they are a little messy). Which is why we only make them about once a year. And why Afton was so excited to get in on the action.

I have shared this recipe before, but it is SO good it deserves to be shared again. It's my Grandmother's Homemade Chicken Noodle Soup. The thing that makes this recipe stand apart from all the other chicken noodle soups out there is that the noodles are homemade.

High Heel Cupcakes {Tips & Tricks}
Do you have a friend that always goes above and beyond to make everyone else feel special? The kind of friend who always remembers everyone's birthday and organizes a celebration? If you do, then you need to make her these :)
I had 'pinned' this idea months ago. So when J's birthday arrived, I knew that a 'closet full' of yummy shoes would be the perfect treat for my fashionista friend.
Supplies needed:
-Cupcakes
-Graham crackers (you could also use cookies like Milanos or NutterButters)
-Melting chocolate (like Almond Bark)
-Sprinkles
-Icing
-Pirouettes (Pepperidge Farm)
-Wax Paper
-Pastry Bag (or Ziploc Bag, just snip off a tiny corner to make a 'tip')
Directions:
1. Bake cupcakes and let them cool.
2. Cut graham crackers into shape for the arch of the shoe.
3. Cover the graham crackers in melted almond bark. Let dry.
4. Ice cupcakes and dip them in a bowl of sprinkles. Let dry.
5. Ice the edges of graham crackers and dip them in a bowl of sprinkles. Let dry.
6. Cut a small slit in the cupcake and insert the graham cracker.
7. Use almond bark to attach the heel.
8. Add embellishments, using almond bark as 'glue'.
9. Place shoes on a flat surface to set.

I was a bit nervous about putting these together. Would they fall apart? Could I actually get them from my house to the restuarant in one piece? I followed the tutorial from "How Does She" exactly. That site has lots of photos of each step. Plan on giving yourself a good amount of time to complete this project. It is a little time-consuming, but totally worth it!
Happily it all worked out! I think the secret to these high heeled cupcakes is lots of Almond Bark. Icing won't hold these heels together. You definitely need melting chocolate that will harden quickly and hold its shape.
The shoe embellishments were made by piping melted almond bark (you can put it in a ziploc bag and snip off the end to create a 'pastry bag') on wax paper. I made bows, swirls, and the letter 'J' to decorate the shoes. Once the chocolate had set on the wax paper, I carefully peeled off the shapes and put them on the shoes.
And here is the birthday girl enjoying her shoes at lunch.
She took a pair home to share with her daughter too. Who doesn't love shoes?!

Pool Party Cupcakes
Girl Scouts is wrapping up for the year, so we celebrated with a pool party. I made these fun cupcakes using Teddy Graham's, paper umbrellas and gummy lifesavers. I posed the bears differently on each cupcake :)

The Best Chocolate Chip Cookies Ever--- the recipe
I posted this photo on Instagram last week and there was a lot of interest in the recipe ...
I originally found it on Edie's blog "Life in Grace". I have written about her blog before (remember the brownies??!), it is one of those sites that has beautiful photos, yummy eats, and a great writer behind it all. Edie described these cookies with such passion, I just had to try them myself.
What I personally like about the recipe is that these cookies don't fall flat. They look as delicious as they taste. I cooked mine for 12 minutes. Be sure not to 'over cook' them, cookies continue to bake on the pan even when they are removed from the oven. So pull them out when they are still light-colored, just a little golden brown on the tops.
Then get a cold glass of milk out and enjoy. The recipe makes a ton of cookies. So I froze half of it. Then a few days later I baked them. To keep myself from totally over-dosing on cookies, I packed up little bundles and gave some away.

Best Chocolate Chip Cookies Ever
2 sticks butter, softened
1 cup of vegetable oil
1 egg
1 cup of white sugar
1 cup of brown sugar
1 t. baking soda
1 t. cream of tartar
1 t. baking powder
1 t. salt
2 t. vanilla
4 1/2 cups of flour
1 12 oz bag of semi-sweet chocolate chips
1 T. milk
Bake at 350 degrees for 10-12 minutes
What I personally like about the recipe is that these cookies don't fall flat. They look as delicious as they taste. I cooked mine for 12 minutes.
